Gingelly oil or sesame oil is a foundation ingredient in approximately 90% of Ayurvedic oil remedies. In ancient tradition, the sesame seed is believed to be a source of numerous nutrients and a sign of prosperity and health. Its main benefit is that it helps to balance Vata. It has a warming effect, grows in a dry climate, and hence is good when there is an excess of dry quality. Usually, in the organic sesame oil ¼ kg of palm jaggery (Karuppati) is added for every 2 kg of sesame seeds in the process of extraction to suffice the bitter taste in the oil. This makes the product costly while others add molasses to make it less expensive and sell it in the name of organic oil. Besides, it’s hard to differentiate between the two byproducts. In Post-production, the gravity sedimentation method is used instead of filtering the oil or adding preservatives and chemicals. Once the oil is extracted it is poured into a stainless steel vessel and white cloth is covered to let it sediment naturally to retain its nutrients.

White vs black sesame seeds

White sesame seeds are slightly nutty and have a mild flavour. Black sesame seeds have a strong flavour with crisper and nuttier. However, pure white sesame seeds are hulled seeds, which are soft, mild, sweeter and mostly used in making sweets. Moreover, it’s difficult to identify from white hulled sesame seeds. It's advisable to look at the packaging to see if the seeds are hulled or not.

The differences between white and black sesame seeds go beyond taste and appearance. Black sesame seeds are preferred in making oil because it is flavourful than white sesame seeds. In terms of nutritional value, the two varieties can differ significantly. The presence of antioxidants is one of the most noticeable differences. Antioxidants are abundant in black sesame seeds compared to white sesame seeds, making them an excellent source of protection against free radicals. Sesame seeds are high in antioxidants and anti-inflammatory compounds and have been shown to lower oxidative stress and aid in the prevention of cardiovascular disease. Also, magnesium is abundant in black sesame seeds. Magnesium is well-known for its ability to lower and maintain high blood pressure.
